    German Potato Soup - Kartoffelsuppe

    Potato soup is a typical German dish that is regularly served in many families. It is easy to prepare and only takes 30 minutes. German potato soup, called Kartoffelsuppe in Germany, is also great for meal prep.

    Make Authentic German Potato Soup With Just a Few Simple Ingredients

    • Potatoes: preferably floury. They contain more starch, fall apart when cooked and give the potato soup the perfect consistency. In the USA, I recommend yellow or gold potatoes for our potato soup.
    • Vegetables: In Germany, we get pre-packed soup vegetables, but you can also buy them individually. For a pot of potato soup you need a carrot, a piece of celeriac (or alternatively a stick of celery) and an onion.
    • Broth: We usually use vegetable broth, but chicken or beef broth works as well.
    • Ham or Bacon: If you want, you can fry chopped ham or bacon with the vegetables. This makes the potato soup hearty. For a vegetarian soup, skip this step.

    You can serve traditional potato soup from Germany plain or top it with various ingredients. Children especially like this.

    In Germany, we often have potato soup with sausages, called Kartoffelsuppe mit Würstchen. If you ever travel to Berlin, you absolutely have to try this dish. We use Frankfurter or Vienna sausages. These are the sausages you use for your hot dog. Cut them into slices and heat them in the finished soup for a few minutes.

    I also recommend these ingredients as a potato soup topping:

    • fried bacon cubes
    • Croutons (cut bread into cubes and fry in a pan with butter or oil and a little garlic until crispy)
    • shredded smoked salmon or fried salmon cubes
    • fried onions
    • fresh chopped parsley or spring onion rings

    Ingredients
     
     

    • 1 kg potatoes floury cooking
    • 70 g celery root
    • 1 carrot
    • 1 onion
    • 1200 ml stock
    • 2 tablespoon olive oil
    • 2 bay leaves
    • salt
    • pepper
    • 100 g double cream

    Optional

    • 150 g bacon
    • 4 sausages

    Instructions
     

    • Peel the onion, carrot and celery. Cut them into small cubes.
      1 carrot, 1 onion, 70 g celery root
    • Peel the potatoes and cut them into cubes as well.
      1 kg potatoes
    • Heat the olive oil in a pan and fry the diced onions until translucent. If you want to use bacon, add it now.
      1 onion, 2 tablespoon olive oil, 150 g bacon
    • Add the vegetables, bay leaves and potatoes and pour in the stock. Cook the potato soup for 15 minutes.
      1 carrot, 1 onion, 2 bay leaves, 1200 ml stock
    • Add the double cream and blend the soup with a hand blender until creamy. Season with salt and pepper. If you don’t have an immersion blender, you can also use a potato masher or mix the soup in your regular blender.

    Notes

    You can keep the potato soup in the fridge for up to 3 days. You can also freeze it. For best results, defrost it at room temperature. Then boil it briefly on the stove or put it in the microwave before serving.
